En la zona oriental del país, este guiso de pescado es muy popular, sobre todo en el plato tradicional conocido como «pabellón oriental» y durante la Semana Santa, cuando se preparan muchos cuajados, pasteles y tortillas. Hoy voy a compartir una receta de tortillas de pescado con zanahorias. Este plato de pescado desmenuzado es fácil de preparar, aunque también se le pueden añadir pasas, aceitunas, plátanos fritos, papas o cualquier verdura que prefieras; queda realmente delicioso, así que espero que lo pruebes. Aquí tienes el paso a paso.

750 gr de pescado desmenuzado(Raya), 06 huevos, 01 zanahoria, 02 cebollas, 100 gr de ajíes dulce, 01 cabeza de ajo, 02 ramas de cebollín, 01 cucharada de cúrcuma, 01 cucharada de paprika, sal y pimienta al gusto. ``` 750 g flaked fish (stingray), 6 eggs, 1 carrot, 2 onions, 100 g sweet peppers, 1 head of garlic, 2 sprigs of chives, 1 tablespoon turmeric, 1 tablespoon paprika, salt and pepper to taste. ```

Lo primero que hay que hacer es preparar el pescado: lávalo bien y luego cuécelo hasta que esté tierno. Déjalo enfriar, desmenúzalo, lávalo de nuevo y escurre el exceso de agua. Para preparar el guiso, lava y pica la cebolla, los ajíes dulce, el ajo y las cebolletas en un picatodo. También pelaremos la zanahoria, la cortaremos en rodajas y la coceremos al vapor hasta que esté tierna.

En una sartén con dos cucharadas de aceite de oliva, rehogar el ajo y los aliños durante unos minutos; cuando se hayan ablandado, sazonar con sal, pimienta, cúrcuma, paprika y orégano, luego añadir el pescado desmenuzado (raya), remover y cocinar a fuego lento, tapado, durante cinco minutos. Reservar.

Cuando todo esté listo, prepara las tortillas. Calienta una cucharada de aceite en una sartén; añade la mezcla de huevos y pescado, y cubre con las zanahorias cocidas. Tapa la sartén y cocina a fuego muy lento durante cinco minutos; con ayuda de un plato, dale la vuelta y cocina durante cinco minutos más o hasta que se doren. Repite el proceso hasta que se acabe toda la mezcla. Esta vez salieron tres tortillas.
