Another day, another new recipe—I’m so happy to share my famous recipes with you again, my friends and fellow food lovers. You know, the ones I come across and think, “I’ve got to try this and see how it turns out.”
This is definitely one of those. At first, I had my doubts about how it would turn out, but the result was just as I hoped. So, without further ado, let’s keep up this healthy pancake trend, and today I’m bringing you some delicious vegetable pancakes. Want to see how I made them? Let’s get started.
Ingredients:
- 1 small potato
- 1 small carrot
- 2 tablespoons cornstarch
- Salt
- Pepper
- White cheese

Preparation:
We have the potato and carrot ready; let’s wash them thoroughly, then peel and grate them. Next, we need to drain all the liquid from the potato—this is essential so our pancake doesn’t turn out watery.
Once that’s done, we’ll mix everything together, adding the cornstarch along with a pinch of salt and pepper.

Now all that’s left is to pour it into a preheated, greased skillet.
Pour in some of the mixture, then add the cheese on top—I used this white cheese because that’s what I had on hand, but you can use whatever cheese you like—and then add another layer of the mixture on top.

Let it cook for a few minutes on both sides, and there you go—look how nice it turned out! And best of all, it’s super tasty. I’m not complaining—it’s a unique breakfast with a distinctive flavor, thanks to these delicious vegetables.
